Tvorozhnaya Zapekanka (baked Russian cheesecake)

Ingredients
- 500g Farmer’s cheese (Tvorog)*
- 3 tbsp Sour cream
- 3 tbsp Sugar
- 1 Egg
- 2 tbsp Semolina
- 100g Raisins
- Vanilla
- 3 tbsp Butter
Instructions
- Pass the farmer’s cheese through a meat grinder (or press through a fine sieve) to make it smooth.
- Add 2 tablespoons of melted butter, the egg beaten with the sugar, the semolina, 1/2 teaspoon of salt, and the vanilla.
- Mix everything thoroughly with a wooden spatula, adding the cleaned and washed raisins.
- Grease a skillet or shallow baking dish with butter and sprinkle it with breadcrumbs. Spread the cheese mixture into the dish.
- Smooth out the surface, brush with the sour cream, and drizzle with the remaining butter.
- Bake in a hot oven for 25–30 minutes.
- Serve the casserole hot with syrup or sour cream.
